Breakfast Casserole and Football Rants

Happy Sunday! I’m sitting here wearing a baseball hat because I have no ambition to fix my hair. I’m attempting to grow it out but I’m at this weird stage where it’s not short but not long and it just lays weird. Lucky for me, I married a man who likes it when I wear a hat so I don’t exactly feel the need to fix it. Don’t worry, I did put makeup on so I’m not a complete troll. I also tried my false lashes for a bit. I need to get better at putting those on as I haven’t worn them in years. And yes, I will totally wear false lashes with a baseball cap. It’s how I roll…

Here in Arkansas, we’re having a chilly fall day. It’s currently 51 degrees outside. According to locals, this is chilly. I wonder if they have experienced an Iowa winter…my guess is no. Since it’s a chilly day, this was a perfect excuse to make a breakfast casserole. I’ve seen several bloggers make casseroles using spaghetti squash instead of noodles. I love them! It’s more labor intensive but so much healthier. I actually prepped this the night before and put it in the oven this morning. My husband raved about it. Meaning, he said, ” This is really good!” and I spent the next 10 minutes congratulating myself on being a gourmet chef. He got a new pellet grill this weekend so last night he grilled me a steak. Don’t worry, I raved about his grilling abilities too. That’s the secret to marriage. You praise their cooking ability and then they cook for you. Write that down. I’m actually turning into a better cook. That doesn’t mean I love it.

Yesterday we took a Harley ride about an hour north to Heber Springs. Harley riding is so much different in Arkansas than Iowa. In Iowa, all of the roads are straight and flat and you can see for miles.  Arkansas doesn’t believe in straight roads and it’s certainly not flat here. It was a really pretty ride and we ended up at Greer’s Ferry Lake. It’s one of the most clear lakes in the US. Since my phone takes crappy pics, this pic really isn’t that great but trust me when I say it’s beautiful. I’m getting an iPhone so maybe I’ll be able to get pics. At first I wasn’t happy about getting an iPhone. I had the iPhone 4 and I HATED it. The battery didn’t last and it was super slow. I’ve heard they improved so I’m gonna give it a chance. I want the nicer camera and the ability to FaceTime with family and friends. Also, my mom wants to FaceTime to see Deuce. She actually said that. She told my dog she would miss him and that they would have to FaceTime. No mention of FaceTiming with me……Oh! Speaking of Deuce, his limp is gone. He’s went on 2 walk/runs with James and it’s been good for both of them.

James is just settling in to watch the Vikings and he’s grilling me lunch. After that, he’s promised me a Target trip. Some people say they don’t want their husbands in Target with them, but I’m the opposite. James is more likely to tell me to buy something. I’m too cheap sometimes! And he’s always up for Starbucks…..NFL is not a good subject for me right now. I’m so pissed at how many good players Jon Gruden is getting rid of. Now the Cowboys are looking at Amari Cooper. Seriously??? First Khalil Mack and now Amari Cooper! Getting rid of your best players isn’t the way to win games. At least Iowa State is doing better…even if the NCAA fined them $25,000 for the post game celebration after beating West Virginia. Hey, NCAA, Purdue rushed the field yesterday too. They better also get fined.

I’m gonna stop before I really go off on football and dumb fines. I should really make some more of this casserole so we have breakfast for a week…..You should make it too!

 

Breakfast Casserole

Ingredients:
1 large spaghetti squash
1 small onion, diced
1/2 cup red pepper, diced
3/4 cup spinach, chopped
3 eggs, whisked
1/2 pound bacon, cooked crispy and crumbled
salt and pepper
Optional: shredded cheese, more veggies

Directions: Preheat oven to 400 degrees. Spray a baking sheet with non stick spray.  Cut the spaghetti squash in half and place cut side down on a baking sheet. Roast for about 45 minutes. When it’s done, flip over and cool slightly. Using a spoon (or a fork!) scrape out the seeds and pulp. Then shred the spaghetti squash out and place in a greased casserole dish. While the squash is cooking, cook and crumble the bacon, dice your veggies, and whisk your eggs. Mix the squash, eggs, half of the bacon, and veggies in the casserole dish and stir until everything is mixed. Top with the rest of the bacon. You could add some cheese if you want to.. Reduce the oven temp to 350 and bake for 1 hour. Let it sit for about 5-10 minutes to cool before eating.

Notes: I prepped this the night before so all I had to do was put this in the oven and bake. You could use other veggies too- I just used what I had on hand.  I’m going to try this later with some breakfast sausage instead of bacon. I used a Corningware dish that one of my parents gave me for Christmas one year. I’ve only recently begun to appreciate it.
