Apple Banana Muffins

If you follow any fashion blogger’s Instagram account, you’ll know that fall is coming. Every picture is a girl with skinny jeans, a bulky cardigan, boots, and a caption that says, “This sweater is giving me major fall vibes.” They’re all also holding what appears to be a Pumpkin Spice Latte. Well, it’s still above 90 degrees everyday here so heavy sweaters and boots aren’t happening right now. It cooled down to 84 here yesterday and that’s still not cool enough for an outfit with major fall vibes.

The kitchen, however, is another story. Yesterday, I made these banana apple muffins and for about a hour, my house smelled like fall. So that was nice. The muffins turned out really well too. So well, that my husband ate two of them right away and he usually doesn’t even like those types of foods. I found this recipe on Autumn Calabrese’s 21 Day Fix cooking show. But after reading the ingredients, I felt it would be too bland for my taste so added some cinnamon and vanilla. Who makes apple muffins without cinnamon? That should be outlawed. These will be great for breakfast or a quick snack. That is, if I don’t eat the rest of them today.

Apple Banana Muffins

Ingredients:
1 apple- finely chopped
2 bananas- chopped and mashed
1 TBSP melted coconut oil
2 eggs
1.5 cups almond flour
3/4 tsp baking soda
pinch of salt
1/2 tsp cinnamon
1 tsp vanilla

Directions:
Preheat the oven to 350 degrees. Take a muffin tin and line 9 cups with paper liners or spray each cup with cooking spray. Chop and mash bananas. Add bananas, eggs, and coconut oil into a blender and blend until smooth. Transfer to a bowl and add in the almond flour, baking soda, cinnamon, salt, and vanilla. Stir until blended. Then add in the finely chopped apples and stir again. Divide the batter between 9 cups filling each until they are about 3/4 of the way full. Bake at 350 for 20-22 mins or until the top is golden brown. Let them cool 10 minutes then eat. (I didn’t do that last step and burnt the top of my mouth).

These are delicious and yes, they are kind of fall like. I’m ready for Honeycrisp apples to be in season. Like any other basic girl, I am looking forward to fall. Mostly because we have friends coming to visit and I’m excited to show them around our new home. It was a year ago this weekend that we came down here to check it out and decide if we wanted to live here. It’s hard to believe that was a whole year ago but man, a lot has happened in that year! The job offer came Labor Day weekend, we moved the first week in October, and we closed on our new house in April! Also, my stepdaughter had her baby in March so that was another change for us. Life seems to be moving at a pretty rapid pace lately. Maybe that’s why we haven’t done anything the past few weekends-we need to slow down. Next weekend is Labor Day so I probably will actually decorate for fall. I brought most of my old fall decor to the consignment shop as it didn’t match the new house. I’ve been scouring Hobby Lobby, Walmart, TJMaxx, and Marshalls for new fall decor that is more neutral. So far, I’ve gotten some white pumpkins and a black pumpkin. Yes, a black pumpkin. It’s really cool! Speaking of decorating, my friend Janelle was just featured in Country Sampler Magazine! I’m so excited for her! Check out her blog and especially her recent post about styling a fall basket. I am actually going to use her tutorial and do my own fall basket. We’ll see if I can make it look half as good as hers!
