New Week, New Recipe

Happy Monday morning! Deuce woke me up at 5:00 am on the dot. I don’t think he gets the whole time change thing. However, it’s now 7:00 and I’ve already had my coffee, worked out, and I’m making breakfast. I’m in a great mood and determined to make it a good week. I’ve been a little down about not getting hired but I’ve been assured that I WILL get a job and that some companies take longer to hire than others. I’ve also began working on some more projects and goals to keep me busy while I’m working on getting hired. Friday I went completely out of my comfort zone and took a group fitness class at the new gym. I had a great time, got in a killer workout, and met new people. And holy crap- I’m still sore!

I wanted to say thank you for all of the love on my blog yesterday regarding the 30 things I was thankful for that weren’t serious. Some of you had some great additions that kept me giggling for awhile. This may have to be a yearly tradition although thinking of 30 new things may be challenging.

I also wanted to say thank you for all of the positive comments I’ve been receiving on my decision to become a  Pruvit distributor. I appreciate all of you who have jumped into try it and all of the questions you’ve asked me. It means a lot that you would trust me with your health. I’m opening up my website for ordering if you’d prefer to order online. Also, I am mailing out some 10 Day Experiences in about an hour. I do have a few left so please let me know if you want any. It’s a great way to start without a lot of investment. I may consider doing some 5 Day Experiences as well. You can get some info by going to this website or by reading this blog post.

And while we’re on the subject of keto, let me say I do not eat a fully ketogenic diet. I love some of the foods but am not giving up all carbs. And I like a treat once in awhile. That said, my friend Heather posted these treats and I made them this weekend. My husband loves Reese’s Peanut Butter Cups and he loved these as well.  He even sent the kids a Snapchat saying they were delicious. I’ll also be making them when my stepkids visit this Christmas!  They are so easy and only take about 10 minutes to mix up. And they’re great to have on hand for a snack. They’re called Fat Bombs because they’re full of healthy fats. Plus, it’s fun to say Fat Bomb. Just don’t say it on an airplane.

 

Make this a fabulous week and then make these treats!

Peanut Butter Fat Bombs

Peanut Butter Layer:
Ingredients-
2 TBSP coconut oil
4 TBSP natural peanut butter
1/4 cup Swerve confectioners
1/4 tsp vanilla
Directions-
Melt the coconut oil and peanut butter in a sauce pan on medium heat. Stir in the Swerve confectioners and vanilla. Drop by tsp into silicone molds and place in freezer.

Chocolate Layer:
Ingredients-
2 TBSP coconut oil
4 TBSP natural peanut butter
1/4 cup Swerve confectioners
4 TBSP unsweetened cocoa powder
1/4 tsp vanilla
Directions-
Melt the coconut oil and peanut butter in a sauce pan on medium heat. Stir in the Swerve confectioners, cocoa powder, and vanilla. Drop by tsp on top of the peanut butter layer in in the silicone molds. Freeze for at least 30 minutes then pop out of the mold. Store in an airtight container in the freezer.

That’s it! These are so good. I know we’re coming up on the time of year where the temptations and treats are everywhere. These taste like a treat but are so much healthier for you! Make a batch (maybe 2)  and bring them to the office treat day or just keep some in your freezer. I guarantee you’ll love them. Unless you don’t leave the combo of peanut butter and chocolate. And if that’s the case…I don’t understand you.
